We make our farmer cheese by pressing the curd until we’ve eliminated almost all of the liquid. It has a mild taste and moist texture, yet dry enough to be sliced. And if you have an aversion to lactose, it only has 0.5% per serving, so it’s a nice way to enjoy dairy when you’re on a restricted diet. All natural and low in fat, it makes a great substitute for ricotta cheese — also great for blintzes and salads.
