Friendship® Chocolate Chip Bran Muffins

Instructions:
In a bowl, combine the flour, oats, sugar, baking soda and salt; set aside. In a large mixing bowl, beat the peanut butter and oil until combined. Beat in the eggs and Friendship® Light Buttermilk. Stir into the dry ingredients just until moistened. Fold in the cereal and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400º for 14-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Yield: 2½ dozen.

2-½ cups all-purpose flour
1- ¼ cups quick-cooking oats
1 cup sugar
2-½ teaspoons baking soda
1 teaspoon salt
½ cup peanut butter
1/3 cup vegetable oil
2 eggs
2 cups Friendship® Light Buttermilk
4-½ cup bran flakes
1 cup (6 ounces) semisweet chocolate chips
