Directions
Blend Friendship® 1% Lowfat Cottage Cheese, Parmesan cheese, 1 oz. of mozzarella cheese and egg white until smooth. Sauté onion, peppers, garlic and tomatoes in olive oil until onion becomes translucent. Divide cottage cheese mixture equally into pita halves. Divide sautéed mixture evenly on top of cottage cheese halves. Add sausage pieces and sprinkle balance of mozzarella cheese on top of pita pockets. Brace them upright in a narrow baking pan. Bake uncovered for 15 minutes at 350°F. Serve with warm marinara/spaghetti dipping sauce. Yield: 2 servings
1 cup Friendship® 1% Lowfat Cottage Cheese
2 oz. part skim mozzarella cheese, shredded
1 tablespoon lowfat Parmesan cheese
1 egg white
1 teaspoon oregano
½ small onion
½ green pepper
1 clove of garlic
1 teaspoon olive oil
2 large plum tomatoes
1 large whole wheat pita bread, cut in half (2 pieces)
1 cup prepared spaghetti sauce/marinara
1 link cooked Italian sausage, sliced in ½ inch pieces (optional)
