Directions
Preheat the oven to 350°F. Coat a 9" x 13" baking dish with non-stick cooking spray. In a large bowl, combine the Friendship® 1% Lowfat Cottage Cheese Whipped, 1 cup salsa, 1 cup shredded cheese, green chilies and black olives; mix well. Spread an equal amount of the mixture over the center of each tortilla. Roll up the tortillas and place seam side down in the baking dish. Spoon the remaining salsa over the tops of the enchiladas and sprinkle with the remaining 1 cup of shredded cheese. Bake for 25 to 30 minutes, or until heated through. Serve immediately. Yield: 6 servings
