Cottage Cheese Spinach Lasagna

Instructions
Preheat oven to 375°. Combine first four ingredients and simmer for 30 minutes; keep warm. Bring 1 qt. water to boil. Cook lasagna 10 minutes. Drain and rinse with cold water. Grease 9" x 13" lasagna pan with olive oil. Spread some sauce across the bottom. Starting with lasagna noodles, alternate cheese blend, spinach, sauce and mozzarella. Make a second layer with remaining ingredients. Bake 30 minutes. Let stand for 10 minutes.

(Makes 8 servings).
½ medium onion, finely chopped
2 cloves garlic, minced
1 28 oz. can unsalted tomato purée
1½ Tbs. each fresh basil, parsley, oregano
¾ Tbs. olive oil
1 lb. frozen chopped spinach, cooked & drained thoroughly
1/3 lb. lasagna noodles
¾ cup each Friendship® Lowfat Cottage Cheese and skim milk ricotta, blended
½ cup skim-milk mozzarella, shredded
Pepper to taste
