Sausage & Spinach Quiche
(2 Pies)

Directions
Preheat the oven to 400°F. In a large skillet, brown sausage over medium heat until crumbled and no pink remains. Remove from the heat and drain off the excess liquid; allow to cool slightly. In a large bowl, combine the remaining ingredients except the pie shells; mix well. Stir in the sausage, and then divide the mixture evenly into the pie shells. Bake for 30 minutes, or until heated through and the crusts are golden. Serve immediately.
Yield: 2 pies make 6-8 servings each
1 container (16 oz.) Friendship® 1% Lowfat Cottage Cheese Whipped
1 lb. hot Italian-style turkey sausage, casing removed
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 package (8 oz.) light cream cheese, softened
1 cup (4 oz.) mozzarella cheese, shredded
2 eggs, beaten
½ teaspoon dry mustard
