Very Friendship® Veggie Quiche

Directions

Microwave spinach for 5 minutes on high and drain well. Spray skillet with non-stick spray and sauté carrots, red pepper, red onion, zucchini and mushrooms and set aside. Combine Friendship® 1% Lowfat Cottage Cheese and mozzarella cheese in a small bowl. Spray a 9" pie pan with non-stick spray. Layer half of the vegetables into bottom of pie pan. Top with cottage cheese mixture. Wisk together egg whites, hot sauce, Worcestershire sauce and skim milk and pour over contents of pie pan. Cover with spinach and rest of vegetables and sprinkle Parmesan cheese on top. Bake for 40 minutes at 350ºF or until set.

5 oz. spinach, washed and chopped
1 cup carrots, grated
1 red pepper, seeded and chopped
1 medium onion, finely chopped
¾ cup zucchini, washed and thinly sliced
6 button mushrooms or 1 portabella mushroom, washed and sliced
1 oz. lowfat mozzarella cheese, shredded
¾ cup Friendship® 1% Lowfat Cottage Cheese
6 egg whites
2 oz. skim milk
1 tablespoon hot sauce
1 teaspoon Worcestershire sauce
1 teaspoon Parmesan cheese
