Creamy Confetti Pasta Salad
Celebrate with this nutritious colorful dish!
Directions:
Combine cooked pasta and drain. Rinse with cold water. Put in a large bowl. Add 1% Friendship Lowfat Cottage Cheese , lemon juice, dijon mustard, parmesan cheese, pepper, salt and stock to the food processor. Puree until the mixture is smooth. Add chopped peppers, cherry tomatoes, onions, black olives, celery, basil and parsley to the pasta. Pour the processed stock over the pasta and mix together. Chill for at least 30 minutes before serving.
