Onion Focaccia

Instructions
In a large, heavy 12" skillet, heat olive oil over medium-high heat. Add onions and cook until soft and brown, stirring occasionally. Meanwhile, preheat oven to 400°F. Spread onions on pizza rounds, leaving ½" border around edge. Crumble farmer cheese over onions with rosemary and finish with salt and pepper. Bake 10 minutes until dough is golden brown. Garnish with additional rosemary if desired.

(Yields 2 x 12" Focaccia).
3 lb. Spanish onions, very thinly sliced
2 Tbs. olive oil
2 tsp. dried rosemary or 1½ Tbs. fresh
1 pkg. (7½ oz.) Friendship® Farmer Cheese
1 pkg. (14 oz.) prepared frozen pizza rounds of pizza dough
1 tsp. course salt
1 tsp. freshly ground pepper
Extra fresh rosemary branches for garnish (optional)
