Beef & Rice Casserole 

Directions:

Preheat oven to 400°F

Cook the rice according to the package instructions. Combine the sirloin, onion and green pepper in a non-stick skillet and cook, stirring, for 4 minutes or until the beef is browned and crumbled. Add the ketchup, chili powder, cumin, thyme, oregano and tomatoes and simmer, stirring occasionally for 10 minutes. In a baking dish, combine the cooked rice, Friendship® Nonfat Sour Cream, scallions and milk. Spoon the beef mixture over the rice. Bake for 10 minutes. Let casserole stand for 5 minutes before serving.
