Mexican Scrambled Eggs Burrito

Instructions
Melt butter in a large sauté pan over medium-high heat. Add peppers and cook until softened slightly. Add mushrooms and chorizo and cook until mushrooms are soft. Lower heat and add eggs, salt and pepper. Cook until eggs set, and stir in ½ cup of Fresh Salsa Sour Cream, top with one quarter of the egg mixture, and ¼ Cup each of shredded lettuce and cheese. Roll tightly, and top with 1 Tbs. of Fresh Salsa Sour Cream

(Makes 4 burritos).
2 Tbs. butter or corn oil
½ Cup diced red bell pepper
½ Cup diced green bell pepper
1 Cup sliced button mushrooms
½ Cup diced chorizo sausage (optional)
12 eggs, beaten
salt & pepper to taste
4 10" flour tortillas, warmed
1 Cup Friendship® Salsa Sour Cream
1 Cup shredded lettuce
1 Cup shredded cheddar cheese
