Caramelize sugar over low heat. Blend in sour cream and raisins. Cover bottom of greased 11x7x1½" baking pan with mixture. Distribute apples evenly over surface. Cream together butter and brown sugar. Beat in egg, sift flour with baking powder, soda, salt, and spices. Add to creamed mixture, alternating with buttermilk, spread batter evenly over fruit. Bake at 350° for 40 minutes. Turn out and serve warm with honey cream sauce.
