Green Chile Chicken Enchilada Casserole 

Directions:

Preheat oven 350º

Season whole chicken with salt & pepper.
Roast chicken pieces in pre-heated 425 degree oven for 20 minutes. Once chicken is roasted, remove skin and de-bone chicken. Shred chicken into small stripes (using two forks).

To shredded bowl, add the green chiles, onion, jack cheese and Friendship® Sour Cream. Mix well. Add the garlic, salt and pepper to taste. (Remember tortilla chips are probably salty).

Take 13 x 9 baking dish and add a single layer of tortilla chips. Top first layer with chicken mixture. Continue to alternate tortilla chips and chicken mixture until you reach top of the baking dish. Make sure final layer is chicken mixture.

Put baking dish into pre-heated 350º oven for 30 minutes. After 30 minutes remove baking dish from oven and top with shredded lettuce, chopped tomatoes, sliced black olives and additional Friendship® Sour Cream (if desired).
1 Whole Chicken (cut up)
3/4 cup green chiles (blended)
1/4 small yellow onion (finely diced)
1 1/2 cups of Monterey Jack cheese (shredded)
1 1/2 cups of Friendship® Sour Cream
Tortilla Chips
Shredded lettuce
Fresh tomatoes (chopped)
Black olives (sliced)
Garlic, salt and pepper
