Chicken Casserole

Instructions
Spray a 3-quart casserole with nonstick cooking sray.

Cook rice according to package directions, substituting 4 1/4 cups chicken broth for water and omitting butter and salt.

Melt 1/4 cup butter in a skillet over medium heat; add mushrooms and green onions; saute until tender, about 10 minutes. Stire in rice, chicken, soup and Friendship® Sour Cream. Spoon mixture into prepared casserole dish.

Stir together crushed crackers and fried onions. Stir in 2 tablespoons melted butter, ,paprika and garlic powder. Sprinkle casserole evenly with cracker mixture. Cover with foil. May be frozen for up to 1 month.

To prepare, thaw overnight in refrigerator.

Preheat oven to 350º. Bake 20 to 30 minutes. Uncover and bake 5 to 10 minutes more or until bubbly.

1 (6oz.)package long-grain and wild rice mix
4 1/4 cups chicken broth
1/4 cup butter
1 (8oz.) package sliced mushrooms
1/2 cup chopped green onions
2 cups cooked chicken or turkey
1 (10 3/4 oz. ) can cream of mushroom soup
1/2 cup Friendship® Sour Cream
2/3 cup crushed round butter flavored crackers
1/2 (6 oz.) can French-fried onions, crushed
2 tablespoons butter, melted
1/4 teaspoon paprika
1/8 teaspoon garlic powder
