Ingredients
Feta Farmer's Cheese- Feta Whipped Farmer’s Cheese
- 1 – 7.5 oz pkg Friendship Farmer’s Cheese
- 4 oz Crumbled Feta
- ½ C Heavy Cream
- ½ tsp Black Pepper
- TT Kosher Salt
- 1 C Watermelon, small dice
- 1 Hot House Cucumber, small dice
- 1 Mango, peeled and small diced
- ½ Red Onion, small dice
- 1 Jalapeno, ribs and seeds removed, minced
- 5 Roma Tomatoes, seeds removed, small dice
- 1 Clove of Garlic, minced or grated
- 2 tsp Honey
- ½ Lime, juiced
- 1 Lime, zested
- 1Tbsp Mint, minced
- ½ tsp Red Wine Vinegar
- 3 Tbsp Extra Virgin Olive Oil
- Kosher Salt – season liberally
Directions
- Combine the farmer’s cheese, feta and black pepper in the bowl of a food processor. With the processor running drizzle in the cream. Refrigerate until you are ready to serve.
- Combine all salsa ingredients and toss well to combine and coat with the honey and olive oil.
- Season liberally with salt and taste for sweetness – if your fruits need a little more help then add another pinch of honey, to taste.
- Refrigerate for about an hour for flavor to marry.
- Serve over Feta whipped Farmers Cheese and add your favorite protein to make it a meal!
