Feta Farmer’s Cheese with Watermelon Salsa

Feta Farmer's Cheese
  • Feta Whipped Farmer’s Cheese
  • 1 – 7.5 oz pkg Friendship Farmer’s Cheese
  • 4 oz Crumbled Feta
  • ½ C Heavy Cream
  • ½ tsp Black Pepper
  • TT Kosher Salt
Watermelon Salsa
  • 1 C Watermelon, small dice
  • 1 Hot House Cucumber, small dice
  • 1 Mango, peeled and small diced
  • ½ Red Onion, small dice
  • 1 Jalapeno, ribs and seeds removed, minced
  • 5 Roma Tomatoes, seeds removed, small dice
  • 1 Clove of Garlic, minced or grated
  • 2 tsp Honey
  • ½ Lime, juiced
  • 1 Lime, zested
  • 1Tbsp Mint, minced
  • ½ tsp Red Wine Vinegar
  • 3 Tbsp Extra Virgin Olive Oil
  • Kosher Salt – season liberally


  1. Combine the farmer’s cheese, feta and black pepper in the bowl of a food processor. With the processor running drizzle in the cream. Refrigerate until you are ready to serve.
  2. Combine all salsa ingredients and toss well to combine and coat with the honey and olive oil.
  3. Season liberally with salt and taste for sweetness – if your fruits need a little more help then add another pinch of honey, to taste.
  4. Refrigerate for about an hour for flavor to marry.
  5. Serve over Feta whipped Farmers Cheese and add your favorite protein to make it a meal!

You may want a bigger spoon.
