  • 2 cups 1% Friendship Dairies® cottage cheese
  • 2 tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 medium white onion, diced
  • 1½ lb. ground hot Italian sausage
  • 4 cups raw kale, stems removed, packed tightly
  • 1 cup shredded Parmesan cheese
  • 1 egg
  • 1 whole lemon, juiced
  • 1 tsp. crushed red pepper
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 lb. cooked pasta (penne or pasta of your choice)
  • 2 cups shredded mozzarella cheese, part skim
  • 2 tbsp. fresh parsley (garnish)


  1. Preheat the oven to 350°F. Grease a 9”x13” dish and set aside.
  2. Over medium heat, add the olive oil, garlic and onion to a saucepan and cook until onions are translucent. Add ground sausage and cook until browned and slightly crispy. Toss the kale into the same pan and cook covered until slightly wilted. Remove from heat and set aside.
  3. In a food processor, add cottage cheese, Parmesan cheese, egg, lemon juice, red pepper, salt and black pepper. Blend until smooth.
  4. In a large bowl, combine the cooked pasta, sausage and kale mixture, the cottage cheese mixture and some red pepper flakes and stir well. Place mixture in the greased dish and top with shredded mozzarella.
  5. Bake uncovered for about 15 minutes, then broil with the door slightly open for 1-2 minutes or until cheese starts to brown and bubble on top. Let cool slightly, garnish with parsley and serve.
