Chicken Satay Bowl Recipe
- 1/2 cup Friendship Dairies® cottage cheese
- 1 tbsp. cilantro, chopped
- 1 tbsp. mint, chopped
- 1/4 cup cucumber, finely diced
- 1/4 cup carrot, finely diced
- 3 oz. grilled chicken breast, cubed
- 1 tbsp. peanut sauce
- 1 tbsp. sesame seeds
- 1 tbsp. crushed peanuts
- Mint and cilantro leaves for garnish
- Mix the chopped cilantro, mint, cucumber and carrots into the cottage cheese. Top with grilled chicken, peanut sauce, sesame seeds, crushed peanuts, mint and cilantro leaves.
- Can't find peanut sauce? Simply dilute crunchy peanut butter with soy sauce, rice vinegar, a few drops of water and canola oil.
