Creamy Chicken Pinwheels

Ingredients
- ½ lb chicken, shredded
- 1 ½ cups Friendship Dairies® cottage cheese
- 1 cup cheddar cheese, shredded
- Red bell pepper, diced
- Red onion, diced
- Spinach, for topping
- Large spinach tortillas
Directions
- Add the chicken, cottage cheese, and cheddar cheese into the bowl of a food processor. Pulse 1-2 times to mix ingredients.
- Spread the chicken mixture onto a spinach tortilla and sprinkle on diced peppers and onions. Top with fresh spinach.
- Roll tightly and slice into 1 inch piece
You may want a bigger spoon.
