Shawarma Roasted Carrots with Cottage Cheese and Feta Dip

For the Carrots:
  • 2 bunches carrots, peeled and trimmed of tops
  • 3 tbsp. olive oil
For Shawarma Spice:
  • 2 tbsp. allspice
  • 2 tbsp. black pepper
  • 2 tbsp. garlic powder
  • 1 tbsp. cloves
  • 1 tbsp. cinnamon
  • 1 tbsp. nutmeg
  • 1 tbsp. cardamon
  • 1 1/2 tsp. chili powder
  • 1 1/2 tsp. dried oregano
  • 1 1/2 tsp. salt
For the Cottage Cheese and Feta Whip:
  • 8 oz. Friendship Dairies® cottage cheese
  • 8 oz. feta cheese
  • ¼ cup milk of choice


  1. Preheat oven to 400 degrees.
  2. While the oven preheats, combine the spices for the shawarma seasoning.
  3. Toss carrots in olive oil and coat in seasoning. Roast carrots for 25 minutes or until tender crisp.
  4. While roasting, combine ingredients for the whip in a blender and blend until smooth. Whip should be the consistency of mayonnaise.
  5. Spread whip onto a platter and top with roasted carrots. Garnish with an additional drizzle of olive oil and serve.
